It happens to all of us. Summer dictates that you should buy a massive watermelon. You are going to a party, a picnic, a cheesy themed luau BBQ. So you kick it Dirty Dancing Style and you bring a watermelon.
And then the inevitable happens. The watermelon has leftovers. There are ALWAYS watermelon leftovers. At least in my house. Then the watermelon sits and goes to mush. If you really forget it is siting in the fridge sawed in half, it goes bad and leaks sticky watermelon juice all over your fridge and you have to scrub the fridge in the middle of summer. Or is that just me?!?!
So this week I am saving us all from the bad watermelon. Once you have finished half of your watermelon in sticky picnic goodness, use the other half with this week’s recipes.
Today, watermelon salsa. A little sweet, a little spicy. Delicious with chips, or spooned over grilled fish. The flavours are so fresh and bright; the perfect summer salsa!
Even Colin, who hates fruit in meals (like strawberries in his salad, or watermelon in his salsa…), even he had to admit this had a great flavour profile. I take my wins where I get them.
Watermelon Citrus Salsa
2 cups watermelon, diced
1 large navel orange, peeled and diced
2 tsp orange zest (from navel orange)
Juice and zest of 2 limes
1/2 large red onion, finely diced
1 jalepeno pepper, seeded and minced finely
Handful cilantro, chopped
2-3 cloves garlic, pressed
1/2 tsp salt
1/8 tsp pepper
Toss together all ingredients in a large bowl. Allow to sit for 30 minutes before serving. Drain any excess liquid.
Enjoy with tortilla chips or served over any white, firm fish. We loved it with rockfish!
